Shopify's native multi-currency selling through Markets is tied to Shopify Payments. Lose Shopify Payments, or never qualify for it, and every buyer is charged in your store currency, with the conversion done by their card issuer at whatever rate and fee the issuer likes. Here are the real options, ranked by how much they actually change at the point of charge.
Shopify Markets can present prices in the buyer's currency and settle you in yours because Shopify Payments handles the foreign-exchange leg. When another provider captures the card, Shopify has no way to charge the buyer in one currency and pay you in another, so Markets falls back to a single checkout currency. The storefront may still convert prices for display if you install a converter, but the buyer is charged in your store currency at the checkout.
A currency converter app rewrites prices on the storefront in the buyer's currency. It changes nothing at checkout. It is honest to use it only with a clear notice that the charge will be made in your store currency, and many merchants find that notice loses as many buyers as the conversion did.
Gateways such as Airwallex, Checkout.com, Adyen, Nuvei and several regional acquirers can charge a card in the buyer's currency and settle to you in yours, or hold balances in several currencies. Shopify's checkout cannot use that capability through a third-party gateway, but a checkout hosted on your own domain can.
